Paul Kahan is one of my favorite chefs of all time. This is true for many reasons including the fact that his cuisine helped me fall in love with Chicago, he makes some of the best food in the world and he hosted a cooking class at Marshall Field’s Culinary Studio for my gourmet dining business many years ago. My family likes his flavors so much that my sister and her husband had their wedding reception at Blackbird. You can say that we are fans.
The great news is that most people agree. It has been fun to watch his career skyrocket as he was nominated for James Beard Outstanding Chef in 2009 and 2007 (and won James Beard Best Chef of the Midwest in 2004). His restaurants continue to grow as he is now Executive Chef/Partner of Blackbird, avec, The Publican and Big Star. Be sure to add these to your list of must visit restaurants during your next trip to the “Windy City”.
