Cappelletti Brodo (broth)


SOURCE: Giorgio Rampon - Carpi, Italy

YIELD: 12

COOK TIME/PREP TIME: 3-5 Hours

INGREDIENTS:
1/2 Hen (bones and all)
10 Beef ribs
1 Leek washed
2 Carrots
1 Celery heart
1 Onion
1 Clove garlic smashed
1 Cup Lambrusco wine (can substitute any good red)
Filtered water
Salt to taste

PREPARATION:
1. Add meat, veggies and garlic into a pot
2. Cover ingredients with filtered water
3. Bring to boil on a hot flame
4. Skim impurities off the top of the broth
5. Add salt to taste
6. Add wine
7. Simmer for 3-5 hours partially covered (letting some steam out)
8. Strain broth and reserve for soup

OTHER:
Giorgio makes this broth while the rest of us make the pasta. This recipe is taken from my observations.
